Menu Plan Monday












Is Thanksgiving week here already?  How can that be?   Wasn't summer just ending?  No?  Well, I guess you're right.  I mean, we did already have our first snow.  We did also have a sweet little surprise late last week too.  My husband's extended-extended family (as in his uncle's extended family who are actually no blood relation to Hubs--who happen to live here in SmallTown as well) called to invite us to join their Thanksgiving dinner this week.  Isn't that just the sweetest thing?

We are most definitely blessed.

It is starting to get COLD here.  The forecast for next week even calls for some snow and I am definitely ready for that.  I can't wait to get some new pictures of our little Peanut all bundled up in the snow.

Monday-Baked potato bar with chili, broccoli, cheese, sour cream, green onions and lots of butter of course

Better late than never right?  Life has thrown us an expected curve ball so I have been a little preoccupied with that these last few days.  I will share more details in the coming weeks as we figure things out.  So for this week we will be having:

How can we be at the start of November already?  Wasn't it just the beginning of October?  We have two months left of the year, people.  I just can't even hardly believe.  Despite my utter disbelief, the show must go on.  So for this week we will be having:

Sunday-Pork with Gorganzola Cream Sauce (didn't get to this last week!), mashed potatoes, steamed veggies

Monday-Out to dinner at Hub's restaurant in Peanut's cute little costume

Menu Plan Monday












Fall is definitely here with the cooler temps, but it's sooo funny as most of the trees here are taking their sweet time in changing colors.  I am SO ready for the fall color pallet outside.  Can I hear an amen?  In conjunction with my readiness for fall, for this week we will be having~

Sunday~Pasta with butternut squash pasta sauce (yes, this would be out a jar {gasp!}, but my landlord swears by the stuff--told me about how amazing it was on no less than three different occasions, and Costco only has it in the fall, so I got some.  It's a two jar pack--my landlord?  She bought 6........packs.), green salad 

Monday~Aglio e Olio (I am branching out here, folks!), green salad with bleu cheese dressing

Tuesday~Chipotle Turkey Chili with apples and cheddar (doesn't that sound amazing?), green salad

Wednesday~Pork with Gorganzola sauce, garlic mashed potatoes, broccoli

Thursday~Asian meatballs, sesame rice, steamed broccoli

Friday~Lentil soup, green salad

Menu Plan Monday












We finally got our (anxiously awaited) pork this past week.   So it's time for me to get cracking and bust out the cookbooks and try to find some great new pork recipes.  Plus, some things came up last week, so several things are being rolled over to this week and taking a look at the menu, I am guessing mucho leftovers, so I am gonna roll the dice and throw in TWO leftover nights.  If not, my stand by will always be there.

Monday-Blanco Chili, green salad (chunky bleu cheese dressing--yes I am still on that kick!)

We have one more day to enjoy with Hub's family and then they leave tomorrow morning.  Which is why I am a little behind in posting!  For this week we will be having:

Sunday-Slow Cooker Honey Lemon Chicken (using drumsticks instead of thighs and is cooking as I type this), acorn squash, green salad with bleu cheese dressing

Monday-Spanakopizza (one dish meal!)

Menu Plan Monday













Today is a big day.  We get to go pick up our hog today in two weeks.  (Update:  We don't get to pick it up just yet.  I guess "the smoke" (bacon, hams) isn't done yet.  Hmmph.)  Well, our hog in the form of nice, little, white butcher paper packages.  Honestly, that's the way I prefer to think about the meat I eat.  In nice, little, white, butcher paper packages.  If I don't, I don't know how much longer I would eat meat.

I prefer to be desensitized like that.

Anywho, the ranch where we got our beef from this year (as well as last) made in error in our meat reservation this spring and didn't order the proper amount of beef.  When the rancher and I figured out his error, he already had sold out of beef, so we didn't have a way to order any more beef.  Enter in more pork.  We'll be getting a fair amount of pork today (three quarters of a hog!), so I am excited.  Now, if they could just create a hog that only has bacon cuts on it.

Oh, how I kid.

Sort of.  

All that to say, we'll be eating lots more pork around these parts you'll be seeing more pork recipes in the next year.  And also on the agenda for this week, Hubs parents get here on Tuesday for a visit, so we are excited to have some visitors!  For this week,

Monday-Cobb salads and focaccia bread

Tuesday-Out for dinner at Hub's restaurant

Menu Plan Monday












I think summer has bidden it's final farewell.  Yesterday it was almost 90 degrees and today it is supposed to be rainy with a high around 70.  Oh, and did I mention rainy?  I don't think we have had any real rain (like fully saturate the ground kind of rain) since the spring. 

I know, I know. 

All my family back home is probably just rolling their eyes, but hey, that is the one thing I L-O-V-E about living here.  (For the record, I don't hate it here, it's just that my heart is back in HomeTown.)  That said, I am very much looking forward to fall--with sweaters, bright fall colors, pumpkin flavored yummies, the smell of cinnamon....I could go on and on.  For this week, we will be having:

Sunday-Leftover Beef Barley Soup (I made a little more than I intended so we are eating that up)

Monday-Chicken Broccoli Couscous (one dish meal!)

Menu Plan Monday

So I didn't get to everything last week, but that really is nothing new!  Summer is definitely hanging around, as the temps are still going to be in the mid 80s this week.  Despite that, I am very much getting in the fall mood.  That is due largely in part because I have worn long pants twice in the last week and my bathrobe is now a necessity in the cool mornings.  And as a matter of fact, yes, I simply couldn't wait for the official start of fall and I already "hung" my new fall banner!   For this week,

Monday-Lasagna--using this tip (I talked to my mom the other day and she was making it and it just sounded good), steamed broccoli

This is an extremely short week, as we will heading off to Hometown for a little R&R, a birthday to celebrate (Thursday), a fantasy football draft (Saturday), and a big ol' kick up your heels cowgirl birthday party (Sunday).  So for this short and sweet week, we will be having:

Sunday-Tuna sandwiches, leftover macaroni salad

Monday-Italian Sausage Pizza with homemade crust and sauce, green salad with homemade ranch dressing (The leftovers we will take with us for lunch on our drive the next day--keeps the fridge nice and empty while we are gone!)

Can't believe we are already on the cusp of fall once again.  The forecast is for a few more hot days this week and then it starts to cool down.  Then, next week we get to go back to Hometown for our second annual birthday/fantasy football draft gala. Oops.....hopefully Hubs doesn't read this.  Gala and fantasy football being in the same sentence might be against "man rules."   Anyhow, by the time we get back the hot weather may be over for this year.  Possibly.....but we always seem to get an Indian Summer, so we shall see.  For this week we will be having:

Sunday-BLTs with garden fresh tomatoes (it really doesn't get any better than this.....), green salad with ranch dressing

Monday-Pappardelle with Corn (didn't get to this last week)

I have just been feeling uninspired in terms of menu items lately!  I think it's the hot weather.  At least that's my excuse this week.  Our landlord keeps extending the invitation to us to come over and swim (I know, how spoiled, right?!?!) and the last thing I want to do is come home and cook after sitting by the pool for several hours.  And seriously, this is the tannest I have been since Hubs and I got married.  Just for the record--I don't tan, I burn.  However, with exposure to the sun every day in short increments, apparently I can tan.  Who knew? 

Anywho, for this week, we will be having:

Sunday-Roasted Chicken, potato salad, green salad with ranch dressing and lots of garden fresh tomatoes

Settling back in again after getting home from our trip.  And now that we are home, this means I have one month to get everything done for Peanut's birthday celebration so I better cracking!  It's also going to be hot all week, so I am avoiding the oven as much as possible.  So my not so original week of dinners will include:

It's a short week around here, as we are taking a trip to visit the Hubs family.  A little stressed, as this will be the first plane ride for the Peanut.  Thankfully I will have the Hubs to count on if either the Peanut or I decide to have a meltdown.  Not that I would do that, of course.

Menu Plan Monday












For me, summer time is so hard to plan meals.....I don't want to heat up the house and most of the things I like to eat involve heating up the oven.  We do have air conditioning (praise the Lord!), so maybe I don't need to be as concerned.  I guess it's just that old habits die hard....at our house in Hometown we didn't have central AC (not nearly as much of a need for it) so I was always careful to not cook meals that called for the oven when the forecast was for warmer weather. 

So here is my somewhat uninspired menu for this week:

Sunday-Sausage and Swiss chard frittata

Monday-Taco salad with taco meat, black beans, cheese, tomatoes, sour cream, and salsa

Tuesday-Grilled hamburgers, oven fries, green salad

Wednesday-Filet Mignon (using up the last few cuts of our beef), baked potatoes, green salad

Thursday-BLT Carbonara Pasta, green salad

Friday-Maple glazed pork chops, sweet potatoes, green salad
