Rosemary Potatoes ~ from my mom
Red potatoes, scrubbed clean, cut into ~1 inch pieces
Extra virgin olive oil
Fresh garlic, minced
Rosemary (fresh is ideal but dried will work too)
Salt & pepper
Toss potatoes in olive oil. Add seasonings to taste and bake on a cookie sheet or baking stone at 400 degrees for 20-30 minutes or until potatoes are cooked through.
